glib2: Use PKGCONFIG_OVERRIDE instead of patching meson.build-s

meson `pkgconfig' module generate pkg-config files during the configure
phase and PKGCONFIG_OVERRIDE can be used in post-configure stage to
avoid directly patching meson.build files.
